2 cups buttermilk 
2 eggs + 1 egg yolk 
4 tablespoons butter, melted 
1/4 teaspoon vanilla extract 
1/4 teaspoon lemon extract 
2 cups flour 
4 tablespoons maple syrup 
2 teaspoons baking powder 
1 teaspoon baking soda 
1/2 teaspoon salt 
 
Combine dry ingredients in one bowl and wet ingredients in a second bowl. Mix until well blended  
using a wire whisk. Combine the bowls together and continue whisking until batter is nearly smooth  
( lumps are okay, dry spots are not) 
 
Portion out pancakes as 1/3 of a cup and cook on a hot flat griddle until sides are set and bubbles have formed all over top of pancake. Flip and cook around 30-45 seconds on other side, Store on a plate in a warm 200 degree oven until all pancakes are done. 
 
Top how you wish. I like whipped cream cheese and bacon on mine.
